Unlike preparing your froth in the Frabosk "Milano" milk frother, using steam systems where temperatures in excess of 150 °C are reached will modify the fat molecules in the milk and therefore become less digestible. The modification of the molecules also separates the froth from the milk sometimes only creating a thin milky consistency with airy froth on top.
